Sunny Day Breakfast Casserole

Ingredients
1 package (12 oz) pork sausage or diced breakfast ham
4 small sweet colorful peppers, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 ½ cups shredded hash brown potatoes or cubed home fries
1 cup shredded Cheddar cheese (4 oz)
½ cup Original Bisquick® mix
1/2 cup milk
1/8 teaspoon pepper
6 eggs beaten
Heat oven to 350°F. Spray 9-inch glass pie plate or non-stick square pan with cooking spray.In 10-inch skillet, cook sausage or ham, sweet peppers and onion over medium heat 8 to 10  minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate. In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended.
Mix with sausage or ham mixture and veggies. Pour into pie plate or square pan.Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.

We prefer two 12 in Ramekins to bake our breakfast pie! We also like a nice fresh blend of Parmesan, Romano and Asiago cheese as a topping! Garnish with chives.

Crock-Pot Marsala Beef

Ingredients

2 Pounds Beef Stew Meat
1 Onion, sliced thin
8 Ounces Canned Mushrooms
2 Teaspoons Beef Bouillon Granules
1/2 Cup Marsala Wine
1/2 Teaspoon Dried Parsley
1 Tablespoon Steak Sauce
1 Can Cream of Mushroom Soup

Instructions

  1. Put meat, onions, and mushrooms in slow cooker.
  2. In a medium bowl, mix the remaining ingredients and pour over the meat.
  3. Cook on high for 6 hours or until meat is tender.
  4. Serve over noodles, mashed potatoes or rice

Crock-Pot Stuffed Yellow, Red and Green Bell Peppers

Ingredients

3-4 Green, Yellow and Red Peppers, cored
3/4 Cup Uncooked Rice
3/4 Cup Bread Crumbs
1 Egg
1 Medium Onion, chopped
1 Pound Ground Round
1/4 Cup Parmesan Cheese, grated
1 Can Diced Tomatoes
Salt to taste
Pepper to taste

Instructions

  1. In a bowl, mix ground round, onion, parmesan cheese, egg, bread crumbs, rice and salt and pepper.
  2. Mix well with hand.
  3. Use meat mixture to stuff the green peppers well.
  4. Place stuffed green peppers to crock-pot.
  5. Add diced tomatoes to crock-pot around and on top of the green peppers.
  6. Cook on low for 8 hours.

Crock-Pot Cabbage Rolls

Ingredients

1 Medium Head of Fresh Cabbage
1 Large Onion, diced
2 lbs of Ground Beef
1 Cup Cooked White Rice
3 Eggs
1 Teaspoon Salt
1 Teaspoon Ground Pepper
1 Can Tomato Soup
1 11.5oz Can V8
2 Tablespoons Worcestershire Sauce

Instructions

  1. On the stove top, cook rice and set aside.
  2. Remove the stem from the cabbage and peel each individual leaf back.
  3. Steam cabbage leaves for 60 seconds and then place in a bowl of ice cold water. Set aside.
  4. In a pan, cook onions until onions are clear in color.
  5. In a large bowl, add ground beef, eggs, salt, pepper, cooked onions and rice.
  6. Mix well.
  7. Taking one cabbage leaf at a time, add a spoon or more of the meat mixture. Using your hand, gather the meat on one end of the cabbage leaf and then roll the leaf.
  8. Layer the cabbage rolls into the bottom of a crock-pot. Layering as you add until all the meat mixture is used.
  9. In a bowl, mix the tomato soup, Worcestershire and V8 juice.
  10. Pour the mixture on top of the cabbage rolls.
  11. Cook on LOW for 4 hours.
