Garlic-Lemon Mayonnaise

Garlic-Lemon Mayonnaise

1 cup mayonnaise

1 tbsp garlic  paste

Juice of 1/2 lemon

Salt and black pepper to taste

2 tablespoons chopped fresh basil leaves

Mix ingredients well and chill for several hours before serving!

Tomato, Sausage, Mushroom and Rice dish with a kick!

2 cups of cooked white rice with butter and salt
1 can diced green pepper, celery and onion tomatoes.
1/2 can sliced mushrooms
1 tablespoon red pepper flakes
1 teaspoon crushed garlic
2 Sausage links (Curlys Smokehouse Cheddar Cheese) sliced on the bias and browned slightly
1/4 cup of shredded Monterey Jack and Colby cheese

Once rice is cooked, top with tomato, mushroom and sausage  and spices added to the mixture and garnish with cheese! Serve with crackers…

Roasted Garlic Butter


1 stick of butter softened
2 crushed cloves of fresh roasted garlic
Pinch of Sea Salt

Place fresh  garlic cloves in an open dish and bake until golden brown. Blend the garlic, butter and sea salt and  keep in a Ramekin that has a lid. Just remove from  the refrigerator for a few minutes before serving!

1/4 cup Kikkoman regular soy sauce
1/4 cup olive oil
2 whole bulbs garlic – each clove quartered and halved
1 onion, chopped
10 ounces stale beer
1 teaspoon each salt and pepper
1-1/2 cups beef stock
3-4 lb. whole sirloin tip roast


In a crock pot place soy sauce, olive oil, and garlic. Add the chopped onion, stale beer, salt and pepper, beef stock, and the whole roast.  Turn crock pot from low to medium and simmer for 6 to 8 hours or until it falls apart. Serve on a bed of mashed potatoes!

40 Clove Chicken


4 Chicken Thighs

1/2 cup plus 2 tablespoons olive oil

10 sprigs fresh thyme

40 peeled cloves garlic, 2 large onion quartered 

Salt and pepper, 1 lemon sliced thinly

Preheat oven to 350 degrees F. 

Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, garlic cloves, onions and lemon slices to coat the bottom of the pot, place chicken on top. Cover and bake for 1 1/2 hours. 

Remove chicken from the oven, let rest for 5 to 10 minutes, and serve. Place chicken on onions, sliced lemons and garlic. Good with broth/white wine reduction sauce w/butter and sauteed mushrooms!
