Goulash for Pot Luck!

Ingredients
2 pounds ground beef (80/20)
2 large sweet onions, chopped
3 cloves garlic, chopped
1 red or green bell pepper
3 cups beef broth
2 15 oz cans tomato sauce
2 15 oz cans diced tomatoes
2 tablespoons Italian seasoning
1 12 oz can of black beans rinsed and drained
3 bay leaves (optional)
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon seasoned salt
2 cups pasta, uncooked (We prefer Penne)

Directions

In a Dutch oven, sauté the ground beef over medium-high heat until no pink remains. Break up the meat while sautéing. Spoon off any grease and add the onions and garlic to the pot and sauté until they are tender, about 5 minutes. Add 3 cups water, along with the tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, salt, pepper and seasoned salt. Stir well. Place a lid on the pot and allow this to cook for 15 to 20 minutes. Add the pasta, stir well, return the lid to the pot, and simmer for about 30 minutes stirring occasionally. Turn off the heat, remove the bay leaves, and allow the mixture to sit about 30 minutes more before serving.

You can  cut this recipe in half and feed 4 to 6 easily with seconds! This is one of our favorite Pot Luck dinners to make!

Cheddar Artichoke Burger

Ingredients:

2 Sesame Seed Buns

2 1/4 lb. Cheddar Burger Patties

1/4 stick of Roasted Garlic Herbal Butter (save whats left over for later)

4 slices of American Cheese

 

Directions for butter: Allow 1 stick of butter to soften. Roast 3 or 4 garlic cloves. Chop up 1/4 up of your favorite herbs. Mash garlic. Blend.

Directions for Burger Patties: Mix 1/4 cup of shredded cheddar with 1/2 pound of hamburger. Shape patties.

Directions: Chop and Grill artichokes until slightly chard (use a grill basket). Grill burger patties. Assemble artichokes on top of cheddar burger patties and cap with each with 2 slices of American cheese. Put the lid back on the grill to allow the cheese to melt. Spread butter on buns and grill until slightly browned. Assemble your awesome burger!

Guy Fieri’s Sriracha-Mayo Burger

Mix 1 cup mayo

1/2 cup sour cream

4 grilled green onions, chopped

1 1/2 tablespoons Sriracha

1 teaspoon each honey and lemon juice

1/8 teaspoon each salt and pepper.

Directions:

Make the sauce and divide among burgers.

1 teaspoon mustard

1/2 teaspoon Worcestershire

1/4 teaspoon each salt and pepper.

Mix well and use as a spread among burgers with toppings.

French Onion Burger for Two

Ingredients:

1/2 lb 80/20 hamburger divided

2 large sweet onions caramelized

1/4 pound grated Gruyere

3 heaping tbsp of flour

Red wine

1 crushed garlic clove

1/4 stick butter

1 sprig of Thyme

1 Bay leaf

Salt and pepper to taste

Directions:

Melt the butter in a small pan over medium heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized, about 25 minutes. Add the wine, bring to a boil, reduce the heat and simmer until the wine has evaporated and the onions are dry, about 5 minutes. Discard the bay leaves and thyme sprigs. Dust the onions with the flour and give them a stir. Turn the heat down to medium low so the flour doesn’t burn, and cook for 10 minutes to cook out the raw flour taste. Grill your hamburger and toast buns. Pile onions and sauce on hamburger patty, top with cheese and season to taste with salt and pepper.

Muenster and Caramelized Onion Cheesburger

Ingredients:
2 1/4 lb. hamburger patties
3 large onions chopped
2 slices Muenster cheese
1/4 cup of soft garlic butter
Salt and pepper to taste
2 Italian Crustini Rolls (Buns)
A1 Sauce

Season onions and hamburger patties with salt and pepper. Chop onions and caramelized them in butter. Spread garlic butter on the hamburger patties and grill them, melt cheese on top then top with caramelized onions. Butter the buns and grill them. We like A1 sauce on our buns. Great burger and simple to make! We paired ours with Mac n Cheese Primavera!
