Spinach, Bacon and Cheese Quiche

6 eggs blended well
1/2 cup canned chopped spinach drained well
1/4 cup of milk
1/2 cup your favorite shredded cheese
1/2 cup fried and crumbled bacon
Salt and pepper to taste
Once the eggs are blended, spinach, milk, cheese, bacon and salt and pepper. Stir until blended. Coat a small 8 in cast iron skillet with butter and heat pan, then pour mix in. Place in a preheated oven at 250 degrees and bake for about 30 minutes or until the top is somewhat springy. Remove from the oven and top with extra cheese if you like! Serve while hot!

Ham & Swiss Quiche

Ingredients
1 Frozen Pie Crust (9″ – unbaked)
1 to 1 1/2 cups Swiss Cheese, shredded
1/2 box Frozen Spinach
1 cup Cooked Ham, diced
3/4 cup Light Cream (or Fat Free Half-and-Half)
3 Eggland’s Best Large eggs
1/4 teaspoon Dry Mustard
Preparation

Heat oven to 350 degrees.

Defrost spinach and squeeze out all water.

Layer crust with 1/2 of the Swiss cheese, then add ham and spinach. Put on remainder of Swiss.

Whisk eggs, cream, and mustard, then pour over top of all.

Bake 40-45 minutes or until eggs are set. Allow to cool 5 minutes before serving.

Brown Rice Quiche

2 cups cooked brown rice
1 egg, beaten
1/4 cup Cheddar cheese
1/2 cup egg whites
1 teaspoon dry mustard
1 teaspoon dried rosemary
2 ounces ham
1/2 cup skim milk
2 cups zucchini, chopped or shredded
Salt and pepper, to taste
Preheat the oven to 425 degrees
In a bowl, mix the brown rice, egg, and cheese and pour into an 8-by-8-inch baking pan. Transfer to the oven and bake for 10 minutes.
Reduce the temperature to 375 degrees. In a bowl, mix together the remaining ingredients, pour onto the rice crust, and bake until the eggs are set, about 30-35 minutes. Remove from the oven and let cool for 10 minutes before slicing.

Spinach Quiche Topped with Bacon and Cheese

Ingredients

  • 6 large eggs, beaten

  • 1/2 cup heavy cream

  • Salt and pepper

  • 1/2 can drained canned spinach

  • 1/2 pound bacon, cooked and crumbled

  • 1/2 cup shredded Monterey Jack and Colby cheese

  • 2 12 oz baking ramekins sprayed with Parkay

Directions

Preheat the oven to 375 degrees F.

Combine the eggs, spinach, cream, salt, and pepper. Pour in Ramekins.  Bake for 35 to 45 minutes until the egg mixture is set. Layer bacon, and cheese on top of quiche 2 minutes before they are done to allow cheese to melt slightly.  Makes 2 individual servings in 12 oz. ramekins.

  • 1 1/2 cups heavy cream

  • Salt and pepper

  • 2 cups chopped fresh baby spinach, packed

  • 1 pound bacon, cooked and crumbled

  • 1 1/2 cups shredded cheddar cheese

  • 1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Directions

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, and pepper. Pour half the egg mixture in the pie crust. Layer the spinach, bacon, and cheese in the pie crust, then pour the rest of the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
